Pav bhaji is one of the popular street food dishes from Mumbai and hugely popular all over India as street food. It is spicier and is made using a mix of vegetables and pav bhaji masala. The name means “Bread with Butter”. It originated in Mumbai as a quick lunch option for textile mill workers, but now it's served at many restaurants across different parts of the country.
In Hindi or Marathi languages, "pav" means bread rolls while bhaji typically refers to vegetables (dry or gravy). The name Pav Bhaji comes from how they are both commonly eaten together - perfect on winter/monsoon days when you want to taste something spicier.

Ingredients you need
Mix Vegetables: The amount and ratio of veggies can vary as per your preference. You can add cauliflower, carrots, potatoes, capsicum, beans and green peas in the mix because they're all so good for health!
(Note: You can add any vegetable of your choice but avoid adding okra, eggplants, radish, corn, yam or green leafy vegetables.)
Butter: You can use butter from any brand or can even go with white butter.

Pav(Dinner Rolls): Soft, fluffy Pav- rolls are a staple in many homes. You can make your own soft and fluffy homemade pav or buy them fresh from the bakery.
How to make it?
Step1: Just rinse and peel your veggies, chop them up nicely with a knife into pieces of approximately 1cm thick or less. That's it!
Step2: Cook vegetables in a pressure cooker, but you can also boil or steam them if you don't have one. Pressure cook for 5-6 whistles or on medium flame for about 12 mins.
Step3: When the pressure cooker is done, take out your vegetables. They should be soft enough to eat with a fork and cooked all the way through.
Step4: Heat a frying pan or kadai (wok). You can also use a large tawa or skillet. Add 2 to 3 tablespoons butter, and as soon as the butter melts add 1 teaspoon cumin seeds that’ll give your dish an aromatic flavor.
Step5: Add ½ cup chopped onions and saute them on a low to medium heat. Saute until the onions turn translucent. Now add a tablespoon of ginger garlic paste. Or instead, you can even use freshly chopped ginger garlic as per your choice. Also add 1-2 green chillies. Mix them well.
Step6: Add 2 cups of chopped tomatoes. Mix them well on a low to medium heat until tomatoes become soft and mushy.
Step7: Add spices at this stage- 1 teaspoon kashmiri red chilli powder, 1 teaspoon turmeric powder, 2-3 spoon ORCO’s organic Pav bhaji masala. Mix them well.
Step8: Now add all the cooked vegetables and mash them along with some water to make it into a thick gravy. Combine and mix thoroughly.
Step9: Keep stirring for 8-10 mins and bring it to medium consistency. It should not be too thick or thin.
Step10: Now cut through the pav from the centre. Take a tava and shallow fry them with butter on both sides.
Serve hot and garnish with a dollop of butter and coriander.
