Pav bhaji is one of the popular street food dishes from Mumbai and is highly popular in all the northern states of the country as well. It is spicier and is made using a mix of vegetables and pav bhaji masala. The name means “Bread with Butter.” It originated in Mumbai as a quick lunch option for textile mill workers, but now it's served at many restaurants across different parts of the country.

Step1: Just rinse and peel your veggies, chop them up nicely with a knife into pieces of approximately 1cm thick or less.
Step2: Cook vegetables in a pressure cooker, but you can also boil or steam them if you don't have one. Pressure cook the vegetables for 5 to 6 whistles or on medium flame for about 12 minutes.
Step3: When the pressure cooking is done, take out your vegetables. They should be soft enough to eat with a fork and cooked all the way through.
Step4: Heat a frying pan or kadhai (wok). You can also use a large tawa or skillet. Add 2 to 3 tablespoons butter, and as soon as the butter melts add 1 teaspoon cumin seeds that’ll give your dish an aromatic flavour.
Step5: Add ½ cup chopped onions and sauté them on a low to medium heat. Sauté until the onions turn translucent. Now add a tablespoon of ginger garlic paste. Or instead, you can even use freshly chopped ginger garlic as per your choice. Also add 1 to 2 green chillies. Mix them well.
Step6: Add 2 cups of chopped tomatoes. Cook them on a low to medium heat until tomatoes become soft and mushy.
Step7: Now you need to add spices at this stage- 1 teaspoon Kashmiri red chilli powder, 1 teaspoon turmeric powder, 2 to 3 spoonful of ORCO’s organic Pav bhaji masala. Mix them well.
Step8: Now add all the cooked vegetables and mash them along with some water to make it into a thick gravy. Combine and mix thoroughly.
Step9: Keep stirring for 8 to 10 minutes and bring it to medium consistency. It should not be too thick or watery. Some people prefer it to be dry so, you have to cook further to remove excess water.
Step10: This completes the bhaji part of the pav bhaji recipe and all you need to do is ready the pavs. Now cut the pav from the centre. Take a tava and shallow fry them with butter on both sides.
Step 11: Serve hot and garnish with a dollop of butter and coriander. Your most delicious pav bhaji recipe is ready.
