1 head cauliflower
1/2 tsp organic coriander powder
6 tomatoes, chopped
2 onions chopped
1/4 tsp organic cumin powder
6 cloves garlic chopped
1/8 tsp organic black pepper powder
1/2 cup fresh coriander leaves for garnish 1/2 inch ginger, chopped
1 green chilly
Salt to taste
Sauté the onions and garlic for 3-4 minutes. Add the tomatoes and all the spices except fresh coriander and cook for 15-20 mins.
Cook the tomato sauce and blend into a coarse paste
Cut off the base of the cauliflower, sprinkle salt and steam the whole head for 5 mins.
In a baking dish, put 1/4 of the sauce, then the cauliflower upturned and drizzle the remaining sauce ensuring it goes inside the stalks.
Bake on 200 C for 30 mins or till a fork pieces the cauliflower easily.
Garnish with fresh coriander leaves before serving.
