Organic Gobhi (Cauliflower) Masala

Ingredients & Measurements:

SERVES 4

  • 1 head cauliflower

  • 1/2 tsp organic coriander powder

  • 6 tomatoes, chopped

  • 2 onions chopped

  • 1/4 tsp organic cumin powder

  • 6 cloves garlic chopped

  • 1/8 tsp organic black pepper powder

  • 1/2 cup fresh coriander leaves for garnish 1/2 inch ginger, chopped

  • 1 green chilly

  • Salt to taste

 

Method:

  1. Sauté the onions and garlic for 3-4 minutes. Add the tomatoes and all the spices except fresh coriander and cook for 15-20 mins.

  2. Cook the tomato sauce and blend into a coarse paste

  3. Cut off the base of the cauliflower, sprinkle salt and steam the whole head for 5 mins.

  4. In a baking dish, put 1/4 of the sauce, then the cauliflower upturned and drizzle the remaining sauce ensuring it goes inside the stalks.

  5. Bake on 200 C for 30 mins or till a fork pieces the cauliflower easily.

  6. Garnish with fresh coriander leaves before serving.
