300 ml Almond Milk/Coconut Milk
100 g lentils
600 g sweet potatoes
Organic curry powder
Organic ginger powder
Vegetable stock
3-4 garlic (Crushed)
2 Onions (Grated)
2 tbsp Cooking oil
Leave the lentil to soak overnight for better palatability or just pressure cook for a long time before the start of recipe preparation.
Take a saucepan and add curry powder to it and let it roast for 2 min on low flame, then add cooking oil to it.
After they both sizzle, add onions, garlic, coriander, and ginger. Let them cook for 5-7 mins and stir in between at some intervals.
Meanwhile, peel and grate the sweet potato. Now, add sweet potato, milk, vegetable stock to the saucepan and let them all simmer for approximately 20 mins.
Now, blend all these with a stick blender and serve with the toppings of Methi seeds and chopped coriander. Have this soup with mushroom bread.
