Vegan Lentil Soup Recipe with Sweet Potatoes

Without sourcing any edible item from the animals, we are preparing a vegan lentil soup recipe with sweet potato. It is not only tasty but have health benefits too.

Vegan diet is one which do not source any edible item from animals and thus we bring here a vegan soup which is healthy and delicious. The lentil soup is made with sweet potatoes and vegan milk such as coconut milk and almond milk. As you know, vegan diet is light and really good for your health and it promotes weight loss and balances the nutrients in the body.

Ingredients:

  • 300 ml Almond Milk/Coconut Milk
  • 100 g lentils 
  • 600 g sweet potatoes 
  • Organic curry powder
  • Organic ginger powder
  • 20g Organic Coriander Powder
  • 5 to 6 Organic Methi Seeds
  • Vegetable stock 
  • 3 to 4 garlic (Crushed)
  • 2 Onions (Grated)
  • 2 tbsp cooking oil
  • Organic Pink Salt to taste

These ingredients are measured to provide enough dish for a family of 4 members. If you want to prepare more lentil soup for, say, six or eight members, then you can increase the measurements of all the ingredients proportionately to get the best possible taste. Always try to use the organic and hand-grounded spices to get the authentic Indian taste.

Steps:

  1. Leave the lentil to soak overnight for better palatability or just pressure cook for long time before the start of lentil soup recipe preparation.
  2. Take a saucepan and ignite the flame under it.
  3. Add curry powder to it and let it roast for 2 minutes on low flame, then add cooking oil to it. 
  4. After it is done sizzling, add onions, garlic, coriander and ginger. Let them cook for 5 to 7 minutes and stir in between at regular intervals.
  5. Meanwhile, peel and grate the sweet potato.
  6. After this, add sweet potato, coconut or almond milk, vegetable stock into the gravy and let them all simmer for approximately 20 minutes.
  7. Check the consistency at the end of 20 minutes. Now sprinkle the pink salt into the lentil soup which is nearly ready.
  8. Now, blend it with a stick blender and serve with the toppings of Methi seeds and chopped coriander.
  9. You can have this healthy soup with mushroom breads for best combination.
